This traditional spanish style snack is getting some big media attention right now and for a good reason. While traditionally you’d rub the tomato on bread, we’re asking you to grate it to get all that delicious juice, seeds, and a little of the skin for maximum benefit. Add on a protein rich optional topping to make it even more filling for a light breakfast or snack. This easily could be used for an appetizer too!
INGREDIENTS
4 Large Slices of Sourdough from Bakery
2 Large Beefsteak Tomatoes
2 Tbsp. Olive Oil
⅛ tsp. Salt
1 Garlic Clove
Optional toppings: sardines, burrata
DIRECTIONS
- Heat oven to 350 degrees fahrenheit
- Cut bread into ½ inch thick slices and then into matchsticks
- Toast up the individual slices of bread for about 10 minutes
- Grate tomatoes into a bowl
- Strain off about ¾ of the liquid and reserve for another use (like adding to your chili, salad dressing, soup, etc)
- Add in olive oil and salt and stir
- Rub pieces of bread with garlic clove and top with tomato mixture to enjoy
