Ingredients
4 Poblanos
1 can Corn
1 can Low-Sodium Black beans
1 Tomato
1 can Green chiles
1 medium Avocado
½ bunch Cilantro
½ small Red onion
½ mango
4 oz. Cotija cheese
Directions
- Preheat oven to 350 degrees
- Line the baking sheet with aluminum foil and place poblanos on it to cook for 20 minutes
- Drain and rinse corn and black beans
- Dice tomato, avocado red onion, and mango all to the same size
- Mince cilantro
- Mix corn, beans, tomato, chiles, avocado, cilantro, red onion, mango, and cotija cheese all in a bowl
- Pull poblanos out of the oven and slit open with a sharp knife
- Stuff the mixture evenly among the 4 and return it to the oven for 5 minutes
- Serve hot or cold
