Ingredients
2 tbsp unsalted butter
1 1/2 cup green apples, diced
1/2 cup shallots, diced
1/2 tsp kosher salt
2 cups cooked beets, diced
1/4 cup fresh mint, chopped
1/4 cup fresh parsley, chopped
chopped walnuts, optional topping.
Instructions
In a skillet over medium heat, melt the butter. Add the apples and shallots. Cook for 3 minutes, stirring occasionally.
Stir in the beets, cook for 3 minutes. Remove from heat.
Squeeze lemon juice on top and stir in chopped fresh mint and parsley.
