Gnocchi with Beef Parmesan Ragu
1 tbsp extra-virgin olive oil
1/3 cup diced onion
3 garlic cloves, chopped
1 lb ground beef
1 tsp kosher salt
1 tbsp tomato paste
1 cup water
1 cup crushed tomatoes
1/2 cup grated parm
gnocchi, cooked
fresh basil, to top
In a large skillet, add the olive oil and onions. Sauté for four minutes over medium heat. Add the garlic, ground beef and salt and increase the heat to medium-high. Stir until combined and cook for 5 minutes.
Add the tomato paste and brown, about 2 to 3 minutes. Stir frequently.
Redice the heat to medium and deglaze the pan with the water. Add crushed tomatoes and stir. Simmer for 15 minutes. Stir in the parmesan cheese.
Place the cooked gnocchi into serving bowls. Top with the ragu and fresh basil. Serve warm.
