Cherry Sage Sangria

Author note: Sangria tastes best when allowed to marinate for at least eight hours.
1/2 cups cherries, pitted and halved
1 orange, sliced
1 bottle of dry red wine, pinot noir or a nice red blend
1/4 cup bourbon
1/3 cup chilled simple syrup
sparkling water
Place the oranges and cherries into a large pitcher. Pour the wine and bourbon into the pitcher. Stir well. Place into the fridge and let the sangria marinate for at least 6 hours.
Serve over ice. Top with sparkling water and a sage leaf.
For the Simple Syrup
In saucepan, combine one cup sugar and one cup water. Bring to a gentle simmer over medium-low heat. Stir occasionally. Cook for 10 minutes or until the sugar is dissolved. Remove from the cooktop. Place in an airtight container and store in the fridge for up to three weeks.
