Pear and Brussels Sprouts Salad

Elevate your holiday experience with this quick and easy Brussels sprouts salad. Not only does it pack a nutritional punch but it will really round out your holiday plate with its bright flavors. 

 

INGREDIENTS

2 pkgs. Shaved Brussels Sprouts

2 Medium Pears

1 c. Dried Cherries

6 oz Gorgonzola Cheese

¼ c. Olive Oil

2 Tbsp. Champagne Vinegar

1 Tbsp. Dijon Mustard

Salt and Pepper as desired

 

DIRECTIONS

  1. In a large bowl, pour the shaved brussels into it
  2. Dice the pears and add them to the bowl
  3. Add the dried cherries and gorgonzola cheese
  4. In a jar combine the olive oil, champagne vinegar, dijon mustard, salt and pepper and shake to combine
  5. Pour the dressing over the salad and toss to combine
